Pretty good. Can't believe you didn't get a copy in the raffle, as everyone who won it had it already!

Really - you must be preparing it differently to me, I'm using taragon and oregano in an extra-virgin dressing to make a paste, coating it and then cooking it at gas mark 5 for 20 minutes... I then sprinkle a little salt and pepper between the leaves and place some potatos, parsnips and large carrots around it on the roasting tray to add to the juices and to cook off nicely. After about another 45-60min it's cooked to perfection - but not sweet in anyway... I take it you're using a demarera glaze?

yes, you are correct. that is exactly how i prepared it. sumptuous. any recommendations for a nice lost years dish?
